
What is your favorite Christmas recipe?
That would be my moms ham. OMGosh is it good! She makes it with Champagne! And its unbelievably moist and tender!... no, seriously my mouth is watering already... have I mentioned I'm so glad to be going "home for Christmas this year?
You'll need:
1 boneless fully cooked ham (at least 9lbs... yeah mom makes enough to feed an army usually... I think its cause she did actually feed an army at one time during dad's career LOL!)
1- 1/2 cups Champagne.
3/4 cup brown sugar.
4-1/2 tsp honey.
3/4 tsp ground ginger.
3/4 tsp ground mustard.
Place ham on rack in a shallow roasting pan. Score the surface of the ham, making diamond shaped slices 1/2 inch deep. Bake, uncovered at 325 degrees for 1 1/2 hrs. Meanwhile in a small sauce pan, combine remaining ingredients. Bring to a boil and cook until glaze is reduced by half. Remove from heat, baste ham with glaze: bake for another 30 more minutes or until meat thermometer reads 140 degrees, basting twice with glaze. Let stand for 10 minutes before slicing and serve with remaining glaze. Should yield about 18 servings.
Another of my favorites is her Buffalo Chicken Dip appetizer, which we usually have while just sitting around and watching Christmas movies or Football.
You'll need:
1 package (8 oz) cream cheese softened.
1 can (10 oz) chunk white chicken, drained.
1/2 cup buffalo wing sauce.
1/2 cup ranch salad dressing.
2 cups (8 oz) shredded Colby-Monterrey jack cheese.
Bag of Tortilla Chips.
Spread cream cheese in an un-greased shallow 1 qt. baking dish. Layer with chicken, buffalo sauce, and ranch dressing. Sprinkle with cheese, and bake uncovered at 350 degrees for 20-25 minutes or until cheese is melted
serve warm with tortilla chips.
