OMG! Tell me these aren't the most delicious things you have ever seen! You should taste them! They are amazing!!! I discovered this recipe a few years back and I make them every year, I make probably any where from 12 to 20 dozen (yes dozen) of these little babies for family members and friends. I usually end up going to the dollar tree and getting a few plastic Christmas containers and filling these up to give to everyone, they all look so forward to them, and honestly lets me real... how can I resist?You'll need...
Butter, Powdered Sugar, Eggs, Vanilla, Cocoa, Flour, Salt, Almond Bark
or White Baking Chocolate, and Peppermint Candy Canes.
To begin, place softened butter in a mixing bowl and dump 1 cup of powdered sugar
into the bowl and mix that together until its combined well.
Next crack 1 egg and add 2 teaspoons of vanilla extract, mix together until well blended.
After that's blended, dump in 2 1/2 cups flour, 1/2 cup unsweetened cocoa powder.
and 1 teaspoon of salt.
Stir around the dry ingredients a bit and then mix with the rest of the stuff.
Then mix everything together on low until the dough comes together.
After all the mixing is done let the dough chill out in the fridge for about 2 hours.
Add plastic wrap over the bowl and place in fridge. While the dough is chilling
go ahead and unwrap a bunch of those candy canes... because this will take a while
and trust me, you have the time.
After two hours, remove the dough from fridge and grab a small amount
and roll into walnut sized balls. Repeat until all the dough is gone. Then use a cup
with a perfectly smooth bottom and lightly flatten each ball. Repeat until all the dough
balls have been flattened. Don't get them overly flat just moderately flat... if you can tell the difference.
Bake at 375 degrees for 7-9 mins or until just barely done.
In the mean time place unwrapped candy canes in plastic ziplock baggy and smash with a mallet.
Pour the crushed candy into a bowl. Remove the cookies from the oven and immediately remove them with a spatula and place on a cooling rack. Let them cool completely.
Place the almond bark or baking chocolate into a coffee mug, nuke for 45 seconds to a minute or until its stirrable. Now dunk one side of each cookie into the melted almond park, coating it well and then dip the cookie into the crushed candy bowl, coating well.
Allow to cool and then eat... Om nom nom nom!
